Our El Pilar, Guatemalan coffee comes to us from a family farm where a father (Benito Avila Guera) and son (Luis Daniel Avila Rivera) team up to produce fabulous coffees. The El PIlar farm was acquired in 1930 by Luis Daniel’s grandfather Eustoquio Avila, at which point in time only produced corn. Thereafter Benito Avila decided to start a multi crop farm and included coffee into the mix. When Luis Daniel started managing the farm he stopped the corn farming entirely and decided to dedicate all their efforts to the coffee plants.

The majority of their 22 Hectares farm is forested with Chalum, pine and oak, and that's exactly how they want to keep it. The beauty of the farm extends from the tops of the native trees to the Xiebe Quiej or Horse Trail river that meanders through their property.

Starting at 1500m and elevating up to 1800m, the El Pilar farm produces clean, crisp and delicious coffee.

We love this coffee as a pour over using a Kalita Wave dripper. Start with 32g of coffee to 512g of 203 degree filtered water. Adjust your grind setting to find that perfect sweet spot of acidity, body and overall flavor.
